I have two pieces of formed foam a large and a small piece not sure which one goes LH to RH are these still used? They are not in the best shape but still usable I think.

Might check the search, as there are some discussions...but I assume you mean the footwell pieces...small goes left of the pedals, large on the pass side. Yes they are still used; otherwise carpet pieces wont fit. Some folk have used spray foam (like "Good Stuff", etc) and then put plywood on top to make the flat plane for the carpet to rest. In theory, they help with sound/heat insulation...
Are these referenced in any of the manuals - I have not found them?

Just the location of the driver side foam.
Divers side is a dead pedal for your left foot.
Or just leave it out for more leg room like I do
