Hey Stan,
pro - tighter pedal feel, better performance
cons - not stock and looks different
While I say these things, mine were very old and original when I replaced them. So the pedal felt tighter but it mostly would have been tighter either way I went.

The stainless hose won't expand like rubber hose will so they're certainly better if you frequently drive your car in spirited fashion. As Gary said with new hoses, stainless or rubber and you'll feel a more positive pedal.

Stan, I just installed Stainless brake lines from Mesa performance. Happy with the result and safety peace of mind. Pedal gets better with each improvement.
You might be able to spray paint them black if you wanted to hide the shiny stainless a bit.

I like mine Stan - but I'm not the guy to ask about originality. 
I have them. Good pedal feel. Install is simple unless your old hose fitting are corroded to the hard lines. Definitely use a flare wrench, otherwise you will strip the hard line nuts.
Plug reservoir holes (to keep fluid from draining). I use wood dowels sharpened in a pencil sharpener (to a dull point). Replace the six flexible lines and bleed system.

You'll need 14mm and 11 mm wrenches. The 11 definitely needs to be a flare nut wrench, I used an open end 14. The fittings can be pretty tight, so a little penetrating oil and is useful. Make sure the wrenches are well and correctly seated on the fittings.
+1 to plug the reservoir holes leading to the master cylinder with sharpened wood dowels to keep the fluid from draining all over your hands. I use an (ahem) electric pencil sharpener.
Plan to bleed brakes afterwards, there will be air in the new lines unless you connected them to the car end first, let some fluid "leak" in, then connected to the hard lines just upstream of the caliper.
