Stephen, I'll say it. It's just a car. Okay, since I run the forum I have to have one, but other than that life's priorities can easily put " a car" pretty far down the list.
Another suggestion... take a million photos along the way, including now before you take things apart. Every corner. I reference photos I took four or five years ago. Which tells you how long it takes me to do something. ;)
I'm certain you're not alone in your dilemma, you're just smart enough to admit it. I'm aware of my "useful years" of working on cars and it's closing in on me too.
I think you'll have to try selling it as a package first with a deadline set when you'd start breaking it up and selling parts...

I just put in a clutch master last week. E12 5-series is what you'll need. I got mine on ebay from Slovania. Had some issues but they may have been a user problem. ;)

Current bid is $0. $5500 is the buy-it-now price but this is a clean title car so the seller can ask whatever they want. They can also bid it up so you have know how much you want to bid beforehand.
Some things I wanted to finish on the E3 before selling. Painting the air cleaner housing and thought I'd share.
I used Northstar single stage RAL 7043. Looks pretty darn close to original.
Installed and working good, although the bleeding didn't go as expected. I haven't had issues with clutch masters in the past since they're so simple, but this one fought me a bit. Nice to get the car out on the road.
