Both heads are good, no cracks? I'm not familiar AMC...what does it refer to?
 
AMC heads were M30 replacements made in Spain. Thought to be good for resistance to cracking. This sounds like a fine deal assuming these particular heads are sound.
Look at "Cylinder heads" in the Technical FAQ on www.firstfives.org for an erudite write-up on m30 head matters.

At a minimum you need to post the thickness after using a micrometer.
below 128.6 is a walkaway.
 
Both measure at a bit over 129mm.

With the "spare" head, I did notice that there are some small gouge marks next to one chamber (see image). It looks like whatever motor it was on probably had some foreign matter in a cylinder at one point. This shouldn't affect head gasket seating (the marks are within the cylinder bore), but maybe someone can chime in as to whether they'd create other issues.

The head that came off of my CS 3.0 motor doesn't have any visible issues.

AMC = amadeo marti carbonell
made in spain, cast is not beautiful, but they are good, worth the opportunity
if scotts head is over 129 mm it is as new, never machined, mine is NOS and is 129,1mm

i bought a brand new one, the last one from a dealer
