Another jack point question - without the engine

I've discovered that it is not possible for me to put my car on jack stands sans engine with my usual side to side technique using the rear subframe rubber bolt mounts (the one next to the rocker mount for the trunk jack) and the frame rails as jack points. When doing so, the front floats up on the side that is under the jacks when lifting the other side from the ground. So I need to do this front to back. I see from @eriknetherlands great post that the front waffle plate under the oil pan is a jack point, as is the differential, both using a piece of wood as a load spreader. My questions are, which first - front or back, how do you secure it from rolling, and are these jack points indeed ok? Any other techinques/pointers?
