If you are going to track your car and want to optimize performance, I'd get the adjustable plates.
My track car doesn't have this sort of fancy adjustment, but I can clearly see where it would come in handy based on tire temps. Even though I run narrow vintage tires, I have seen 15-20 deg F between inner, center, outer tread. Changing tire pressure only helps a little bit, and ultimately I end up having to drive differently (slower on certain turns) so I don't cook a particular tire on longer sessions. On real race cars, this would be dialed out, in part, with camber adjustments.
