I'd like to track down a driveline noise by lifting the car with tires off the ground and run it at slow speeds. Is this OK for the CV joints or is the droop angle to severe for them to operate without suffering damage?

Generally you won't hear noises that you hear inside the car while driving. Too many other noises and the load is gone when the car is up. Better to eliminate by coasting, braking , accelerating, loading and unloading in turns, etc...

no risk as the shock is limiting the angle that the cv arm is deployed, but as this depends on your setup bear in mind that limit angle is 18 degrees
