I am struggling to remove the old handbrake cables from these.... Am i missing something here??

I'm not sure, but for me it looks like one peace part (linkage + bracket). Later linkage have little bit different mount part.
Try also to put it for the night in something like WD40 or other rust remover - maybe it will let it go.

Or you can have that type of mount, so cable is mounted on that ring of the bracket.
So, maybe it just heavy stuck on it - WD40 + hammer

Hi,
the Walloth&Neesch replacement part is a tad different vs original.
The original, as in your pic, is one part inserted from the wheel side. It was installed with the cable factory crimped.
The new cable is a seperate part with a mounting flange. The metal block with the 2 mounting bolts is a seperate part.
First install the metal bloc on the wheel side, then slide the cable from the diff side with its mounting plate over the bolts and secure with 2 nuts.

See link with some more explanation.
