I'm mainly looking for the doors, rear mechanic for the window and window, windshield.

Since you've basically got E9 shells... you might be interested in something like this.. @Shawn Essex 's 2800cs track car.

I met Shawn at a LA car show. It's a very cool build.

Metric Mechanic makes very nice M30 motors that might interest you:

Welcome. Did you buy both shells or just the “white” one? Either way it’s an ambitious project. You’ve come to the right forum. Similar builds Have been documented here. Tons of knowledge you can’t find anywhere else. Don’t be afraid to ask questions.
Good Luck.

Just the white one, the blue one was purchased by someone in Texas.

You'll probably be interested in this Vintage BMW show - there are a few E9 owners that show up:

And for inspiration, @lafngrvy 's Luigi CSL is always fun to see at the Laguna Seca historic races in August:

You might get some Group 2 fender ideas from that one....

Most owners on this site maintain a blog / journal / build log that documents the restoration history of their vehicle. Most build logs are quite detailed, with lots of photos and commentary (often spanning several years) and other information that really helps the car community.

As an example, you can find my blog in the E3 forums (The 1970 2800 Project), where I discuss design details, photograph my spare parts, document the spare part vendors I purchased from, etc. (Current Status: I am in the process of selling the '70 E3 / 2800 vehicle and buying a '72 E3 / 3.0s / Bavaria which I will be converting into a hybrid track / street car.) I've restored several BMW's from the 80's (they're on my blog), but I found this forum to be very helpful when working on the E3 vehicles that are now 50+ years old. I find the more you give, the more you get back.. I welcome the broad range of feedback I receive from my posts. I routinely meet & hang out with members here at various car shows across California; it's a great group of people.

Having said that... IMHO... I believe a lot of people would be very interested to watch the restoration of your E9, given the initial photographs you posted in your this new member welcome message.
