Does the process remove the old stuff? Can you extend to say, the hockey sticks at the base of the seats, covers on the top of door handles, chromed plastic plugs/fillers in the center console?

Not included, I removed it with ferric chloride and then I sanded the parts
I also paid $60 for the hockey sticks. I have no idea about the other parts...

I also need to buy those hockey sticks (4) for both of my front seats. Where did you buy them? Thanks, Drew

Is the process called Physical Vapor Deposition?

If yes, then it is an ideal technique for anything that needs a long-lasting shiny layer.
As the technique deposits a thin layer of actual metal on top of the base material, the result is very shiny.

I plan to do the same locally (well in Germany) when the time is there for me.

Yes. The process of PVD is very popular today. Especially for headlamps in a car.

The challenge is that - as Erik has stated - the layer is very thin, so for the parts which are having contact with hands etc it has to be protected.

Also, depending on the metal deposited (it is not only aluminum but some others) different protection is needed.

That process is not good for all plastics. The best results are in the high temperature where most of cheap plastic will just melt, so proper material selection in the key and not each plastic can be coated that way.

Other option is chrome "painting" with again protection transparent layer of paint over. Such a method is more robust, no high temperature, less cost ... frequently used for cheap plastic in bathrooms and other household equipment.
