So, when driving above 35mph, i noticed that the engine temperature appears to be dropping very close to the cold side of the gauge. It's literally almost touching the blue. Then when I slow down or come to a stop the temperature rises again. I checked to see if the thermostat was stuck open, but after testing it, it appears to be working just fine. I checked the gasket that goes around it as well. It appears to be fine too. Any Thoughts?

Sender....or grounding. Meaning all connections from the battery to frame, negative. You have to do this on the coupe...address all grounding points and make sure they are pure. And I will be redundant, an extra wire to the rear or the car is a good idea, especially for CSi. Maybe the rear mounted battery will remedy these issues. I am thinking to go this way.

also check that your fan isn't locked on (which is what I do here) which can keep it cooler than normal depending on climate.

Measure the resistance of the sender cold and then hot and compare to known resistor values.

A quick check of the guage is to ground the sender wire to see if it pegs hot.

You could remove it and put it in a pot of water that you slowly heat and you will see when it opens. Leave it in when the water cools and you will see when it closes. Repeat a few times to be sure.

As far as I know, there is only 1 temperature sensor, with a brown wire that runs to the alternator, where it meets a bunch of other wires. Is that the sender wire?

I've done this a few times already. It appears to be working just fine. I have a whaler 71 degree thermostat.

the 71 degree tsat is not correct, it should be 80 celsius, can you post the wahler reference number for your tsat ?

agree on the ground issues, but in my case bad grounding meant hotter reading in th gauge:mad:

check the fan too

I have a mechanical temperature gauge in my Bav, and the reading on it is much more consistent and meaningful than the original electric one.
