as long as coolant / head temperatures are truly consistent with your gauge readings there isn't a lot to worry about ... but the question remains - are you sure they are accurate and consistent. please remember that gauges on 40 year old cars aren't always accurate. my fuel gauge reminds me of that, so does my speedometer.
since i haven't read this thread in a while, i'm presuming that you have bled the air out of the cooling system. that you have replaced the temperature sensor, you have checked the ground on your gauges. i also presume that your compression numbers are consistent and accurate. that the cooling system holds pressure. i do remember that you didn't have foam on your dipstick or brown sludge in your coolant.
