I found a second water temp sensor. Was this for emissions? Could this be repurposed for a dash gauge?

yes, that's where the oil pressure sensor goes. i'm not used to looking at that space with a carb car, there is a lot more room there than on an injected car with the C tube intake manifold. for a water temp sender, you can replace a single one with a VDO sensor with 2 tabs or you can put on the newer thermostat housing with multiple sensor holes. you will find that the 14mm sensors are harder to find than the 12mm, but luckily there are more slots for 12mm sensors.

I have two water temp sensors in my car. One is used to drive the gauge in the dash, and the second is located at the bottom of the radiator and is used as a secondary method to turn on the fan in front of the condensor. It initiates the fan when the car gets hot and the AC is not on. I forgot the spec - 80C maybe? @sfdon recommended it.

yep, got both of those plus one for megasquirt and one for my vdo gauge - so 4 ...
i think the one at the bottom of the radiator is 91d and the thermostat is 80 ... but @sfdon spec'd both
