Did a quick search and did find what I was needing. What is the low/high resistance spec on my 2800cs coolant temp sensor? Anyone?

Hi Gary -- I think you are going to have a hard time finding that information. The temp sensor is an off the self VDO thermistor, and you can buy a new replacement VDO part with the same dimensions that will function exactly as the part originally provided with the car. I know because I substituted a new VDO sensor in my car and have been running it for several years now. VDO publishes technical data for its automotive thermistors, but this data does not include high and low resistance:
