Can I make the driver side seat go farther forward to help accommodate my wife's shorter legs in our 2800CS?

hi bill, what is the need in doing that ?
it is essentially a pain to make such a complex modification, but on the other hand you can use this little inconvinience to stop a cascade of soon to come headaches, pains, and problems by simply stoping her driving the coupe,

Yes, some sort of off-set spacer plate between the seat and the runners would do it.
Maybe some 1 1/4 inch x 3/8 thick strap steel, Counter sunk high tensile machine screws through the strap into the seat
And threaded holes to bolt up through the runners into this strap.
A bit agricultural, but effective, I wouldn't go less in thickness than 3/8 as you need good strength and holding power for the bolts.
I have been out to the garage, measured and done a drawing for you, What I have drawn will move the seat forward 50 mm (2 inchs)
Remember, if you are tall on the other hand and like the seat back a long way, the seat will now not go back as far as it did, with these brackets in place it will now be 50mm (2inchs) further forward even when all the way back.
If you like the look of these, great, but please check all sizes before you make anything. I would hate for you to make these and have them wrong on my account :)
My car is RH drive, but sizes would be the same.

P.s

Make sure you round all the corners as I get the feeling moving the seat forward this much, it may end up hitting the side of the transmission tunnel?

I ran into this same problem for the same reason. When you try to adjust the drivers seat all the way forward, it interferes with the console. I made some brackets out of heavy gauge sheet metal to shift the seat outward, so it could go further forward before hitting the console. It worked OK, but I could really feel that the seat and steering wheel weren't aligned, which drove me nuts.

Ended up removing the brackets, and using a pillow to accommodate the shorter driver.

Headaches will result from the apparatus proposed or from her driving the coupe?

Thanks

Dear all,
Thanks for the input. I will take the long weekend to see what I can come up with.
As far as keeping my wife out of the car, she has driven it more than I have so far, so I need to find a fix. She is a bigger Motor Head than I am.
Happy Thanksgiving!
