Help !! Anybody got 2 16" Alpinas ? parts to trade or $$$

The rims I have look to be 7" (casting 7J x16H2) I imagine running 7" all the way around ? I did not know you could run 8" in the rear.

You can certainly run 8" (or wider in the rear). You can also run 8" up front, but not easily with 16" wheels (due to strut clearance). One benefit of going 7" all around is that you can rotate your tires. Anyway, if you are looking for two wheels, you can be flexible and hunt for 7" or 8".
 
I looked again and it turns out that I have staggered 16" wheels. So I have one 8 and one 7.
It is going to be a hard to round up half a staggered set. I was a little annoyed at who ever stole half a staggered set of wheels years ago, probably scrapped them for the aluminum.

You are going to need to keep you eye on ebay and buy these one at a time.
 
I think you are right about that.
Have been checking Ebay /Craigs every day or two hoping to get lucky.
