For my V8 powered MGB, I use one of these temperature sensing probes that pushes in between radiator fins to turn the cooling fans on...

Use a standard "ice cube" relay and in line fuse. It is probably best to hook it up to an always hot power source so that the fan(s) will stay on if needed with the ignition off.
