To make things simpler, you could use a 3.5 short block, that way you can keep your original head/weber setup. You may have to open up the head a little more to allow for the bigger pistons, though. You will also have to rejet the webers, more than likely.
Remember, prior to the m30b35 used in late e24's, e34's and e32's, all M30 heads have identical intake and exhaust passages, valves and combustion chambers, regardless of displacement -- 2.5 to 3.5, all the same.
