This folded instead of seams is for older 2800 models? I don't see this on new (1974) models. Is that correct?

Your 74 would have a sewn shoulder as pictured, all others are folded. And in 74 the seat bottom is longer than earlier coupes along with horizontal pleats introduced in 74.

Apologies if this is slightly off-topic... I've attached a couple of photos of the bottom of my driver's seat. Anyone know if there is any significance to these paper tags? Anyone seen similar?
